If you hide the design of a database, the document properties window doesn't allow showing field values.
But why are you concerned about users being able to see the field values of one of their documents? And why do you want to limit the access to these properties for the user? No-one forces them to right-click and select Properties, so unless they ask to see it themselves, it cannot possibly do any harm. Or is there something you chose NOT to tell us, about the underlying reason for your question?
It is not much different from Outlook, where you can press View/Options... to look at internet headers, which are normally hidden from the user.
